I must confess... I have no idea where you're going with this conversation, but I'll comment on this last bit:
Deckard was basically being arrested by a cop and a Blade Runner to be escorted to the police station, whether he wanted to or not. If he would've gotten up from the noodle bar and started running away, they would surely have pursued him until he was caught.
Deckard reminded Bryant that he had already quit and it's obvious he did not want to do what was being asked of him. Bryant said Deckard didn't have any choice, so he was being forced to do the job.

Is Gaff his last name for sure?
Taffy Lewis is called by both names(and later just "Taffy"), does that mean he is part replicant?
Most of the Human characters that are called by their last name all seem to be in positions of authority, so it makes sense to call them by their last names. I think it is mostly coincidence and means nothing more.

There are a lot of Heads and Faces in Deckard's apartment. Most seem to be Buddha's or based upon Buddhist art. The two white face seem to be Geisha's, but also echo the look of the Buddha heads. maybe it is supposed to give us an idea that Deckard is searching for his spirituality, or maybe he just shops at Pier 1 imports. By the way, face images are often used in film to give a feeling of paranoia, and also considered bad Feng Shui.
